Ok, there is a simple way to do this, some people have often complained about getting an echo on skype using stereo mix with their pranking.
What i normally do is configure my settings so that the echo is pretty much cancelled out but i've noticed that that works better on some sound cards than others.
Here is the simplest and fast way to do it, it's rather easy and simple, don't worry about a thing.

First off, go into tools > options > advanced
Now go to where it says hotkeys and click on mute microphone, now click 'change selected hotkey' and assign a button combination to mute your recording.
Whenever the other person is talking you can tap your hotkey and skype wont recieve signals from your soundcard so that they don't pick themselves up over the phone and you can continue recording, to make sure it's recording you can call the echo 123, set your sound recording program to record the conversation and practice using the hotkey while playing music, you'll notice that your recorder continues recording the music but skype wont hear it.

Now they don't have a reason to complain that you're getting echoes, but you'll still need the right settings when you're talking over someone (which isn't something you do all the time anyway)
